What We’re Cookin’
Like the classic Southern fish camps of old, we skip the frills and focus on scratch-made quality. We pride ourselves on our Mississippi farm-raised catfish, line-caught grouper, and Gulf shrimp cooked up however you choose – grilled or fried, with baskets, platters and po-boys.
And don’t worry landlubbers, we also have hand-breaded chicken, borrowing the pickle-brined southern-fried recipe from our friends at Waldo’s Chicken & Beer. And no plate would be complete without our hushpuppies, cheddar biscuits, and scratch-made sides. To wash it all down, we have darn good iced tea, fresh-squeezed lemonade, sodas, draft beer, cocktails, and some famous boozy slushies…Yeah, that about covers it.
Fish Camps Of Old
Back around the turn of the 20th century, small fish camps were popping up throughout the Southeast states. From the Carolinas, down to the Gulf, plates of catfish, flounder, shrimp, and oysters were cooked by the fishermen, either for their own lunch or for workers who were by the water. Sometimes these spots were open-air nooks or roughly built sheds – the ultimate no-fuss dining. In other areas, like fresh-water mill towns, fish camps were often larger, catering to families seeking out inexpensive places to eat with their neighbors. Then, once car travel was more common and tourism started increasing, some of the popular fish camps built out their spots and opened up more formalized restaurants. Complete with menus and everything!

Tall Tails
Want to know a little secret about Salty Tail? Although you might think that our name is simply a nod to our menu, it’s actually the name of a racehorse that had a less than illustrious career. “Salty Tail” was purchased by Francis “Franny” Titus, our Founder Waldo’s grandfather, not to chase big wins but to simply win enough to pay for his daughter’s college tuition. He did this by running Salty Tail in unwinnable races to drop him down in standing. Then, with a lackluster reputation cemented, he would enter the racehorse in local, easier races. His daughter would bet on the horse and, well, let’s just say that the college’s tuition office happily took cash.
